I’m pretty sure we can all agree that breakfast is the most popular set of foods that is acceptable to eat any time of the day. I love breakfast in the morning, afternoon, evening and snack. I haven’t met a breakfast food I didn’t like, even on Whole30. One of the things that is amazing about Whole30 is because you are not working with foods that have more chemicals than you probably realize, the food prep always tastes just as good as the first day on the third day. I tend to make at least one breakfast casserole every three days with a variety of things included. My husband also makes a mean frittata, so I always look forward to those. This sausage egg bake is stunningly delicious. And, before you turn your nose up at the spinach or mushrooms. Try it. Mama always says, “Try everything once, if you don’t like it, you don’t have to eat it again.” Anything by 40 Aprons has been fail proof and I am so lucky to have found her blog. I highly encourage you to shimmy around and see what other recipes you can find. Because I love bacon, I love this breakfast casserole! Yes, it has brussel sprouts and before you start complaining, again, read the above paragraph. Although, I do feel like you all may leave me in the dust after this one. But, I promise, it is SO good! Paleo Running Momma’s blog is also another Whole30, paleo guru that I have come to love. Since I mentioned the frittata, I will share the recipe we use with you, here. With this, we also sub out sausage for bacon, it just depends on what we have on hand. It still is so very good. That is a beautiful thing about veggies, meats and eggs. You can literally get creative and build a breakfast casserole out of anything. The important thing to remember is that if you are doing Whole30, or following a compliant lifestyle, then the ingredients must be compliant. That is the only rule. In addition to the casserole, I usually will pair it with a half an avocado or a handful of olives, and some fruit. Homemade hash browns or diced potatoes are another good thing to add with this dish if you need the extra starchy carb. Friends, I will preach time and time again, prepping food for the week does not have to be overwhelming or take up much of your day. The idea is that you can set yourself up for 3-4 days and stay on track while committing to your best self. #notsponsored
